Mzuzu University Applications for Short Courses for 2020-2021 Academic Year

The following short courses at Mzuzu University are being supported by the
Strengthening Higher Education Access in Malawi Activity (SHEAMA) program,implemented by Arizona State University with funding from USAID Malawi.
Faculty of Tourism, Hospitality and Management
Short Course: Food Safety and Hygiene in Food Processing for Beginners
Introduction:
Every day hundreds of people, unknowingly, suffer from food poisoning as a result of eating processed food that may look, taste and smell perfectly normal but it is in fact contaminated with harmful hazards such as pathogens during the food processing stages. Each step of handling, processing, storage, and distribution affects the characteristics of food, which may be desirable or undesirable. Thus, understanding the effects of preservations method and handling procedure on foods is critical in food processing.
Mzuzu University through the Department of Hospitality Management will conduct a six (6) month non-residential short training course in Food Safety and Hygiene in Food Processing for Beginners. Candidates will be required to make their own arrangements for meals and accommodation. The purpose of the training is to equip prospective food processing handlers with appropriate knowledge, skills and attitudes critical to appropriate food safety practices in any food processing environment.
The course will be delivered by a team of Mzuzu University Lecturers, who were certified by the Malawi Bureau of Standards as trainers in Food Safety and Hygiene.
The short course will be delivered through a blended model of Open, Distance and E-learning (ODeL). At the end of the course, candidates will be awarded a Certificate in Food Safety and Hygiene in Food Processing by Mzuzu University.

Course Description:
The course, which will take both theoretical and practical approaches.
Notwithstanding, where necessary, special arrangements will be made for practical lessons which candidates will be required to complete at Mzuzu University (Main campus and the Tourism and Hospitality Skills Development Center at Dunduzu) and/or Mzuzu University ODeL satellite centers in different parts of the country.
The course will run for six (6) months and will focus on the following key areas of food safety and hygiene in food processing:
• Food hazards (physical, chemical, biological and allergenic) in food
processing environments, Personal hygiene for food handlers, Food
poisoning and food borne diseases, Basic food storage (dry storage,
refrigeration and freezing, hot holding),Food handling and preparation
(contamination and cross-contamination),Cleaning and sanitising processing equipment (manual and mechanical dishwashing),Pest infestation, prevention and control in food processing areas,Value addition in food processing, Food preservation techniques, Setting up a system for food safety (Hazard Analysis Critical Control Points [HACCP]),Entrepreneurship in a food processing

Tuition Fees
The total fees for the programme is MK275,000. The fees include tuition and cost of training equipment and materials for practical lessons. Scholarships will be made available to a few candidates that will meet the programme-set criteria.

Short Course: Community and Primary Health Care Promoters
Introduction
Primary health care has proved to be the most effective and handy intervention to improve health of communities. Community and Primary health care promoters are critically important in rural areas where individualized and culturally competent
healthcare services are limited, yet affordable, easily accessible, comprehensive and promotes active community participation.
Community and Primary Health Care Promoter training aims to equip individuals who work to improve healthcare outcomes by facilitating healthcare access; adding value to the healthcare team; and enriching the quality of life for people who are poor, underserved and hard to reach communities. Community and Primary Health

Care Promoters act as a liaison between healthcare providers and consumers within rural and urban communities.
Target group
Community Health and Primary Health Care Promoter training targets community health care volunteers in community health programs, and interested youths with an aim to equip them with knowledge, skills and competences to facilitate provision of primary health care services in communities in which they live. Experience has shown that youths who have just finished up secondary school education engage in
community health volunteering especially those from underserved communities.
This program strengthens capacity of these youths who engage in community health services and widen their opportunities to get formal employment in community health and community development programmes.
Course description
The program will be offered through an open, distance and e-learning approach.
Participants will spend 10 weeks in training for the theoretical part. There will then be engaged in a 8-week hands on practical experience in accredited Community
Based Organizations, International Organizations and public institutions.
Participants will go through various modules including health care delivery systems, community assessment, mobilization and education, common diseases and their prevention among others. At the end of the course, candidates will be awarded a Certificate in Community and Primary Health Care Promoter by Mzuzu University.
Tuition Fees
The total fees for the programme is M150,000. The fees include tuition and cost of training equipment and materials for practical lessons. Scholarships will be made available to a few candidates that will meet the programme-set criteria.
MZUNI and SHEAMA will support the students to get placements at industry, NGO and government institutions in order to practice.

Applicants should have a Malawi School Certificate of Education (MSCE) with passes in English, Mathematics and General Science. Those from SHEAMA target rural districts of Karonga, Kasungu, Salima, Balaka, Mulanje and Chikwawa, especially adolescent girls, young women and persons with disabilities, are particularly encouraged to apply.

Prospective applicants can also obtain applications forms at Mzuzu University campus or Mzuzu University ODeL satellite centers located in Karonga (Karonga Teachers Training College), Lilongwe (Lilongwe Teachers Training College), Balaka (Balaka Secondary School) and Mulanje (Mulanje Secondary School).
